Glad I found out it was National Banana Bread Day! I have been waiting to share this Peanut Butter + Cocoa Nib Banana Bread recipe with you! I can’t get enough of cocoa nibs. They add such a delicious cocoa nutty layer to whatever you put them in!
This is a super simple recipe. Start by preheating your oven and greasing + flouring a 9×5 pan.
Mix your dry and wet ingredients.
Fold them together with a spatula.
Pour into your pan!
Bake and slice!
Look at how nutty and delicious this is!

Peanut Butter + Cocoa Nib Banana Bread
Makes: 1 loaf Oven Temp: 375 degrees F Total Time: 1 hr 30 min
Ingredients:
1 1/2 mashed ripe bananas
1/3 cup + 1 Tablespoon vanilla yogurt
1/3 cup creamy all-natural peanut butter
1/4 cup butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup brown sugar
1 1/2 cups whole wheat flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/4 cup chopped dry roasted peanuts
1/4 cup cocoa nibs
Directions:
Preheat oven. Grease and flour a 9×5 pan. In one bowl whisk together dry ingredients. In another bowl, whisk together wet ingredients. Fold wet ingredients into dry ingredients until well melded. Pour batter into pan. Bake until a fork is inserted into loaf and comes out clean (about 55 to 65 minutes).
I can see goodness from the inside to the outside…I will have to try this in my kitchen. Yummy!
