Raspberry Mojito Pops

Here in Arizona we are all cheersing (if that’s even a word) to the end of summer! We can’t wait for the heat to be over! So accordingly, I thought I would supply you with a little Raspberry Mojito Pop to cheers with this sultry weekend, one of the last of the year!

Another great thing about these raspberry mojito pops is that they are less than 100 calories each. If that doesn’t give you something to cheers about, I don’t know what will!  P.S. How pretty are those deep red raspberries next to the creamy white yogurt!

Cheers to the end of summer SaucyPants!

 

Raspberry Mojito Pops

makes 8
6 hrs 

Tastes just like a mojito sans the alcohol. Or you can always spike them to make it more fun!

2 cups vanilla goat milk yogurt
10 mint leaves sliced into pieces
juice from 1 fresh lime
2 cups frozen raspberries

Spoon yogurt into a large bowl. Add mint slices and lime juice. Stir. Finally, stir in frozen raspberries quickly so that the yogurt doesn’t turn pink! Spike these with some rum for more fun!

Spoon out mixture into popsicle molds. Freeze for at least 6 hours or overnight. 

Popsicles are less than 100 calories each.
